Vivien and I have been talking about it. I think it'd be a lot like Ladyhawke. That was a love story where the protagonists barely spent any time together.

It was a love that did not know what time it was. Two trains passing, well not passing more like missing but you get the idea, in the night.

Well, spot the obvious typo in the title. sigh.
Two ships, not even on the same ociean, if if they were, not in the same century, passing in the night... sorta.
I'm sure it's possible. Just pushing the ol' boundaries (in a way that doesn't involve sex, just for a change).

And I'm trying to figure out the first...the only way I could see a reader accepting a paranormal inspirational novel would be if there were demons or angels. And if you are Christian, the romance couldn't be with either of these things...it would not really be Biblical or involve 'faith' in the right way. So would the demon just be the antagonist? Or would the angel give out romance advice to the heroine?
As for the last one, I would say something like the film with Sandra Bullock & Keanu Reeves...they write letters to one another in different times, but really don't meet until the end. You could always end the book with the likelihood of the couple meeting once the book is over...but it would be tough.
